Nyama Choma
Story
Nyama choma, Swahili for grilled meat, is Kenya's national dish and one of East Africa's most deeply social foods. Its roots lie in pastoralist traditions across the region, where hunters and herders cooked game and goat over open fires on expeditions, a practice that gradually became a domestic and communal ritual. In Kenya today, nyama choma joints are gathering places where friends and families spend entire afternoons around charcoal grills, drinking Tusker beer and eating with their hands. Among the Kikuyu the dish carries ritual weight: at wedding feasts the groom must sever a goat shoulder joint in a single clean knife stroke in front of the assembled guests, a public test of character still taken seriously.
Ingredients
- 1.5 kg bone-in goat meat (ribs, shoulder, or leg), cut into large chunks, or beef short ribs
- 6 cloves garlic, minced
- 1 thumb-sized piece of fresh ginger, grated
- 1 teaspoon ground cumin
- Half a teaspoon paprika
- 2 tablespoons vegetable oil
- Juice of 1 lemon
- 1 teaspoon salt
- Half a teaspoon black pepper
- For kachumbari: 3 ripe tomatoes, finely diced
- For kachumbari: 1 red onion, finely diced
- For kachumbari: juice of 1 lemon
- For kachumbari: small handful of fresh coriander, roughly chopped
- For kachumbari: half a teaspoon dried chilli flakes
- For kachumbari: salt to taste
Method
- 1. Score the meat deeply with a knife to allow the marinade to penetrate. In a bowl, mix the garlic, ginger, cumin, paprika, oil, lemon juice, salt, and black pepper into a paste.
- 2. Rub the marinade all over the meat, pressing it into the scored cuts. Cover and refrigerate for at least 2 hours, preferably overnight. Remove from the fridge 30 minutes before cooking.
- 3. Prepare a charcoal grill and allow it to reach a steady, medium-high heat with glowing coals (no open flame). For the oven: preheat to 180C fan.
- 4. Grill the meat over the coals, turning every 8 to 10 minutes, for 40 to 50 minutes depending on the size of the pieces, until the exterior is well charred and the interior is cooked through. If using the oven, roast covered in foil for 1 hour at 180C fan, then uncover and raise to 200C for a further 20 minutes to char the surface.
- 5. Rest the meat, covered loosely, for 10 minutes before cutting into bite-sized pieces.
- 6. To make the kachumbari: combine the tomatoes, red onion, lemon juice, coriander, and chilli flakes. Season with salt and toss together. Leave to sit for 10 minutes.
- 7. Serve the nyama choma on a chopping board or large plate, meat cut into pieces. Eat with your hands alongside kachumbari and ugali (stiff maize porridge).
